1. Kurmura (puffed rice) bhel
This image depicts kurmura(puffed rice) bhel with added farsan and
chat masala(snack spice) because there was already a scarcity of food
everywhere and inflation was horrible.
This time there was something more to add i.e. chopped onions, peanuts, and some chopped chilies.
2. Dahi Wada
This was made up of cumin butter, curd(with sugar mixed in it) and chat masala(snack spice) sprinkled on it.
This time there was something more to add i.e. sev(small crispy noodles) and chana dal(split chickpeas).
3. Samosa and momos with the same stuffing
The
stuffing for samosa was made by mixing spices according to the taste with peas
and potatoes smashed after boiling. Spices were made by grinding dry red
chilies, Cinnamomum Tamala, cinnamon, cloves, and black pepper. The outer
coating was made up of wheat flour. The final step is to let the entire samosa
get deep-fried with medium flame.
4. Frankie
Left over chapatis(tortillas) have a good use here. The same method for making the spice as that of samosa was used here. This mixture added with chopped onions and sweet corns was stuffed in the chapati(tortilla). Then folded the chapati from edges to prevent the stuffing from falling off, sprinkled cheese over it, let it get steamed for about 7 minutes to let the cheese melt, and spread enough tomato ketchup on it. Finally, the Frankie should be into eatable pieces.
5. Murmura(puffed rice) Chinese bhel
Murmura(puffed rice), tomato sauce, chili sauce, and schezwan chutney were mixed all together to get the Chinese bhel. The quantity of ingredients obviously
depends on the number of consumers. Only these 4 ingredients were added at that
time due to the inflation and scarcity of food. However, chopped onions,
chopped tomatoes, chopped chilies, peanuts, chickpeas, a dash of lemon, and
sev(small crispy noodles) sprinkled on it will surely enhance the taste.
6. Dabeli
Bread was used here to get stuffed. The stuffing was made using the same
recipe as mentioned for samosa but sugar was also added in the mixture
according to the taste before grinding. Adding chopped onions and peanuts with
the stuffing in the bread will boost the pleasure.
7. Boiled pulses
Pulses such as chana(chickpeas), chawlli(black-eyed beans), matki(moth bean), moong(split green gram) were boiled here. One may add other pulses too. Tamarind chutney, mint chutney, chopped onions and tomatoes, and spices were added with these boiled pulses. Then there was a dash of lemon, and sev was sprinkled on this mixture.
8. Bread and butter
9. Ragda patties/patties
It consisted of ragda(dried peas curry), tamarind chutney, mint chutney, chopped onions
and tomatoes, chaat masala(snack spice) with sev sprinkled on it. Whereas
patties/patties were made by boiling, smashing, and shallow frying the potatoes.
10. Pav bhaji.
Bhaaji(vegetable dish) was made by smashing boiled and chopped vegetables like potato, cauliflower, peas, capsicum, and tomatoes. Bhaaji was garnished with coriander, chopped onion, and a dash of lemon. This vegie can be eaten with toasted sliced bread or pav.
11. Sheera.
Made
up of rava/suji(semolina) with curry leaves, salt, mustard seeds, coriander, and
turmeric added in it. Well, eating it is a pleasure when served hot.
12. Frozen basundi that tasted like a kulfi
Since it is a quite expensive sweet dish, one can buy it on an occasion and then get it frozen.
